Aizen/Ichigo for me.

I used to be a huge Aizen/Ichigo(or anyone/Ichigo really) fan back when I first got acquainted with the series, but after 3-4 years I've moved on to various different pairings. At this point I like pretty much anyone/Shinji, but Uruhara/Shinji is my favorite. :3

I find pretty much all the Arrancar/Vizards characters interesting. Oddly I've got a soft spot for Shunsui/Orihime, but there's not a lot of that around.

That is pretty rare pairing, I understand your pain. I almost always end up falling in love with the rarest pairings in an anime. >.>' Nnoitra and Kensei are particularly cool to me. Actually, now that I think about it that would make an interesting fic... *.*
